The Shangri-La Italian chef Simone Loisi from the brand’s Singapore hotel is in November hosted by Shangri-La Kuala Lumpur for a culinary extravaganza, at two of the hotel‘s most exquisite dining venues: Lafite and Lemon Garden. The chef is usually at the helm of Waterfall Ristorante Italiano, Shangri-La Singapore.

Hailing from the heart of Puglia, Italy, Chef Simone will transport diners to the flavours of Southern Italy with his authentic and delectable creations. Guests can savour the flavours and textures of authentic Southern Italian cuisine, prepared with Chef Simone’s unique flair and passion for quality ingredients.

At Lafite: A Culinary Masterpiece

From the 24 to 25 November 2023, Lafite will present a special 5-course Waterfall Tasting Menu curated by Chef Simone Loisi. This meticulously crafted menu will showcase a vibrant array of his hometown specialties, handmade pastas, and delectable main courses.

The culinary journey begins with a delightful amuse-bouche, Focaccina Salmone e Mascarpone, where the homemade focaccia provides a warm and soft base for the delicate marinated salmon, complemented by the creamy richness of mascarpone cheese. For the antipasti course, diners can choose between the creamy Burrata Pugliese, where Burrata cheese from Puglia offers a burst of fresh creaminess, paired with the peppery bite of rocket salad, the sweetness of cherry tomato, and the salty tang of olives. Alternatively, the savoury Parmigiana Di Melanzane combines the earthy flavours of eggplant, the depth of Parmesan, the richness of tomato, and the creaminess of mozzarella.

The menu also offers the option of indulging in Zuppa/Vellutata Di Astice, a rich Lobster Soup that envelops the palate with the sweet essence of lobster, or the earthy Risotto Parmigiano e Tartufo, where the earthy mushroom and Parmesan risotto is elevated by the luxurious aroma of white truffle. Alternatively, guests can savour the homemade Pappardelle alla Romana, featuring tender pasta ribbons cradling the savoury richness of chicken ragout and the intoxicating aroma of white truffle.

For the main course, choices include the succulent Branzino alla Griglia, a grilled seabass that delivers a smoky and tender delight, complemented by the freshness of sautéed broccoli and carrot, all harmonized by the vibrant beetroot sauce. Alternatively, there’s the savoury Tagliata di Manzo, a beef tenderloin tagliata that offers a carnivore’s dream, with the tenderness of the beef, the peppery bite of baby spinach salad, the richness of Parmesan cheese, and the sun-kissed sweetness of sundry tomato.

To round off this culinary journey, diners can enjoy a choice of dessert. The options are the classic Tiramisu, a homemade delight that layers the flavours of coffee-soaked ladyfingers with the creaminess of mascarpone, or the refreshing Panna Cotta, featuring mint panna cotta with assorted berries that provide a vibrant and sweet ending to the meal. The Waterfall tasting set dinner is priced at RM 350 net per person at 7pm.

On the 26 November 2023, Lemon Garden Sunday Buffet Brunch will feature the very best of Italian culinary delights. Guests can indulge in an Italian Cheese Selection, savour fresh salads bursting with vibrant flavours, and witness the culinary magic happening live at our pasta stations and freshly baked pizza. Chef Simone’s signature dishes will be a highlight of this exceptional brunch, including the tantalizing grilled Octopus, which offers a delightful blend of smokiness and tenderness, and the savoury roasted Chicken, seasoned to perfection, among other delectable options. The menu also includes classic dishes like Frittura di Calamari, a crispy and succulent Fried Calamari. Bruschetta al Pomodoro a classic Bruschetta, a timeless Italian favorite. Parmigiana di Melanzane an Eggplant Parmigiana, a savory and comforting dish. The pizza station offers classics like Margherita, with its simplicity and elegance, and there is a vegetarian option for those with diverse tastes.
