This partnership brings together two award-winning venues to host a one-of-a-kind culinary exploration, set against the backdrop of Bali’s natural wonders: the charming seaside of Jimbaran Bay and the serene heart of Ubud, Bali’s cultural and spiritual centre. Each location offers a unique approach to nature-inspired ingredients and fosters meaningful connections with the wider community.
Perched on a hill with breathtaking views of Jimbaran Bay, Rumari, meaning the “House of the Sun and the Full Moon,” is a fine dining destination at Raffles Bali. Under the leadership of Chef Gaetan Biesuz, Rumari is inspired by strong connections with likeminded trade partners, including farmers and artisanal producers. Each dish on the menu is a journey into the captivating corners of Southeast Asia, showcasing its culinary savoir-faire in a contemporary style. Guided by the 80/20 rule, Rumari’s menu highlights fresh produce, with 80% of the ingredients sourced from the Indonesian archipelago and the remaining 20% imported only when necessary.
Chef Syrco Bakker embraces the fertile soil of Bali with the opening of Syrco BASÈ in January 2024. Having most recently led the two-Michelin-starred Pure C restaurant in The Netherlands and worked alongside some of the best in the culinary world, Chef Syrco now brings his expertise to Syrco BASÈ. This Culinary Hub offers a multi-sensory, multifaceted journey that transcends the boundaries of contemporary dining. Rooted in the essence of Balinese, Indonesian, and wider Asian culinary traditions, Syrco BASÈ showcases local products with the core values of Traceability, Nature, and Transparency (TNT). By telling the story of the people behind these ingredients, the restaurant not only elevates them with expert preparations but also gives them a prominent stage everywhere they are featured, reflecting its commitment to transparency, sustainability, and collaboration.

Launched in January 2024 in Ubud, Bali, Syrco BASÈ is a pioneering culinary hub created by two Michelin-starred chef Syrco Bakker, along with his culturally diverse team of culinary professionals, sommeliers, mixologists, architects, artists and designers.
