Crafted by celebrated Executive Pastry Chef Andrea Bonaffini, the Citrus Breeze Afternoon Tea combines local ingredients with innovative flair, offering a unique escape into the heart of Thai-inspired gastronomy.

The journey begins with a sparkling welcome and an amuse-bouche of torch ginger sorbet and Samut Songkhram coconut sugar – a perfect introduction to the delightful experience ahead. The savoury course unfolds with a selection of sophisticated dishes: balik of salmon sphere with beetroot orange cream, flan de elote with Hokkaido corn and popcorn powder, smoked duck foie gras with apricot and cherry compote, and blue belly prawns with tomatillo emulsion and Oscietra caviar. Each bite showcases Chef Andrea’s artistry, balancing flavours and textures to captivate the senses.
“The savoury offerings are crafted to surprise and delight, with each dish offering a new layer of flavour and texture,” Chef Andrea adds. “Our goal is to provide a memorable journey that celebrates traditional and contemporary elements.”
The adventure continues with a surprise of Shirasu paired with passion fruit cream, dashi, and tozasu crystal. Guests will then enjoy a selection of sweet delicacies: grapefruit-jasmine, yuzu with sesame and pomelo, kumquat with vanilla and pistachio, and a verbena raspberry tart. To refresh the palate, a finger lime and mint fruit surprise with white chocolate, followed by a zesty lemon sorbet soft-serve ice cream. Each element is complemented by a selection of fine teas or coffee, completing the afternoon experience.
