The new Origin Bar cocktail concept for year 2025 is launched as a concept-driven collection that offers guests a fresh perspective on flavour, creativity, and storytelling.
This new ‘Point of View’ menu serves as a continuation of the five-star hotel bar’s curious journey of flavour discovery, presenting its unique take on mixology through three distinct time frames:
- Reimagined – A modern interpretation of classic cocktails, breathing new life into timeless inspirations.
- New Era – A reflection of today’s world, addressing contemporary challenges through thoughtful and innovative creations.
- Boundless – A limitless exploration of imagination, pushing the boundaries of mixology with unconventional and daring compositions.

Under the Reimagined time frame, Origin Bar reinterprets the classic Sazerac by shifting focus to an often-overlooked element – absinthe. Traditionally a supporting note, absinthe takes centre stage in this innovative creation, presented as a delicate absinthe air that enhances the bold character of rye whiskey.
Complemented by lemon oleo saccharum, peach, and bitters, this reimagined cocktail offers a fresh perspective on a timeless classic, bringing new depth and complexity to every sip.
No Offense (Popcorn, Apricot, Origin Pimento, Orientalist Imperial Rum)
Under the New Era time frame, this cocktail challenges the notion of sensitivity in modern times with a bold and unapologetic approach.
Designed to provoke conversation, it dares guests to embrace its audacious character. A rich blend of popcorn-infused dark rum is stirred down with a house-made pimento dram—featuring candied ginger, allspice, lime zest, and apricot, delivering a striking depth of flavour.
Presented with an intentionally provocative serve, this cocktail is more than just a drink, it’s a statement.

Zero to Hero (Hazelnut, Maple, Toasted Milk, Apple, Monkey Shoulder Whisky)
Under the Boundless time frame, this cocktail embodies transformation – just as a tiny acorn grows into a towering tree, a single drop evolves into layers of rich, complex flavours.
Inspired by the resilience of nature within the urban landscape, this clarified milk punch brings together maple, hazelnut, apples, and blended whisky, all refined through toasted milk for a silky-smooth finish.

Ants and Bees (Iichiko Saiten, Burnt Honey, Vanilla, Verjus, Amazonian Ants Chocolate)
Under the Boundless time frame, this cocktail draws inspiration from nature’s most meticulous workers – the bees and the ants. Their dedication and precision are reflected in a delicate balance
of flavours, featuring caramelised honey infused with vanilla, paired with the refined smoothness of Japanese shochu.
White verjus, an unfermented juice from pressed unripe grapes, adds a crisp, natural acidity. Served alongside high-cocoa chocolate topped with lemon-infused ants, this creation is a tribute to craftsmanship, complexity, and the boundless possibilities of flavour.
With 18 bespoke cocktails and 5 mocktails, ‘Point of View’ serves as both a legacy and a creative canvas, bringing to life a vision that is at once fresh, different, and exhilarating, yet easy to understand.

Accompanying the cocktail experience is an exciting new bar bites menu, thoughtfully curated by Chef de Cuisine Simon Bell from Origin Grill. Embracing a playful “hands or chopsticks only” concept, guests are encouraged to dive into a delightful selection of small plates and shareable bites that spark culinary exploration. Designed to be fun and interactive, this menu invites guests to engage with their food in a whole new way.
