Carna dining Mondrian Hong Kong news: Mark your calendar for a carnival of dining in June as the World’s Greatest Butcher’s (the talents of Tuscany’s Dario Cecchini) inspirations meet a trio of tempting possibilities, with the passion and flair of Tuscan culinary artistry.

This cosy renaissance sanctuary with jaw-dropping views of Hong Kong’s harbour and skyline from the 39th floor of Mondrian Hong Kong, in the heart of the Kowloon’s dining and nightlife buzz, needs no introduction to adventurous diners and Hong Kong’s cognoscenti.

And the month of June offers three very good reasons to embrace Cecchini’s world of poetry, play and passion, juicy cuts and joi de vivre this June, with three new menus to savour.

Italian National Day Panzano Brunch, June 2, 2024
Carna is delighted to celebrate Italian National Day with a Festa della Republica Brunch, inspired by the convivial traditions of Cecchini’s native Panzano in Chianti, the Tuscan town where he is the eighth in a long line of butchers and food connoisseurs.

Expect the food, beer and wine to flow in accordance with the Tuscany region’s generous and welcoming traditions. The Panzano style brunch offers unlimited sharing of the finest Italian fare to celebrate.

Begin with Antipasti Della Casa, Formaggi E Salumi, Olive, Focaccia, Verdure In Agrodolce, and Insalata Verde. Appetisers will include Tartare Di Manzo Al Profumo Del Chianti (Black Angus Rump Beef Tartare), Burrata Caprese E Basilico (Apulian Burrata) and Melanzane Alla Parmigiana (Eggplant, fresh Mozzarella, Basil, Tomato Sauce).

Carna serves up Cecchini’s famous Rigatoni Al Sugo Di Puntine Di Maiale (Homemade Pasta with Braised Pork Ribs), and selections from the Charcoal Grill including Salsiccia alla Griglia (Charcoal Grilled Homemade Beef and Pork Sausage), Italian Bistecca Toscana (Italy, Grain-fed Frisonat, Carima, 45 Days Dry-aged) and Bistecca Etrusca 300 Days (Australia Beef Chuck on The Bone, 60 Days Dry-aged).

For dessert, a signature Tiramisù di Casa (Layers of Savoiardi Biscuit, Coffee, Mascarpone Cream, Rich Chocolate). Enjoy free flow Italian beer for all guests during the brunch.

Reception starts at 12:00pm, brunch starts at 12:30pm.

Prepare for a Father’s Day Brunch and Dinner for the ages, served family style, in the finest Tuscan traditions. Three special dishes for dinner will be featured to celebrate.

Brunch begin with antipasti temptations, then all you can enjoy, unlimited reorder appetisers and pasta, including Battuta Di Manzo Con Tartufo E Salsa Al Peperoni (Black Truffle Rump Beef Tartareand Carpaccio di Manzo E Pane Croccante (Sliced Raw Beef).

But save lots of room for the main course, a meat platter to share and something special to salute your papa from Carna’s Charcoal Grill.

Select your favourite steak: Black Angus Cube Roll, HK$728 (Min 2pax), Chuck Flap, HK$788 (Min 2pax) or Carima Costata Di Manzo, HK$888 (Min 4pax).

Plus unlimited side dishes and Zeppole di San Giuseppe al Tiramisu for dessert

Enjoy HK$280 per person for free-flowing Sommelier-selected prosecco, wines, mixologist cocktails, house draft beer and sodas. Additional HK$200 to upgrade your Prosecco to Champagne.

Carna will be launching a series of sumptuous monthly wine dinners featuring the finest Italian wines, kicking off with the Frescobaldi Wine Dinner on 28 May hosted by Stefano Benini, Vice President & Export Director, 30th Generation Family of Frescobaldi.

To complement a sommelier’s selection of some of Frescobaldi’s premier vintages, Carna has crafted the perfect menu.

Selections include Tartare Di Manzo, Cannoli, Truffle, Misticanza, Ricotta (Chopped Black angus beef tartare, potato shell, Truffle, Mesclun, Ricotta cheese) matched with Castello Pomino, Benefizio Riserva, Tuscana, 2021; Flan Di Funghi, Con Cream Di Parmiggiano Di Fresolbaldi, Croccante Di Mandorle (Porcini flan, Parmigiano Foam, Almond crumble, Sautee porcini); and Polpette Di Midollo Al Carbone Da Condividere (Stewed meat ball stuffing with bone marrow cover in a charcoal flavor) paired with Montesodi, Chianti Rufina, 2020.

The pasta, Paccheri Alla Milanase (Pancheri saffron sauce, Beef Cheek ragout, green oil, Cheese Fondue) is matched with Lamaione, Tuscana, 2019. Accompanying the main course – the spectacular Duo Di Manzo Con Salsa Al Merlot(Duo Of Beef chuck, Soft Polenta, Red Wine Sauce, Gremolada) – is Ripe al Convento, CastelGiocondo, Brunello di Montalcino Riserva, 2017.

Dessert is a delectable Ossobuco alla Milanese (Mango Soup, Sago, Pomelo, Coconut Parfait)
