Sakura Serenity Buffet Singapore dining offer: From 16 April to 15 June 2025, guests can indulge in this thoughtfully crafted menu that celebrates the essence of Japanese cuisine. This exquisite Japanese culinary journey is conceptualised by Chef Elson Lee in collaboration with their Executive Chef David Toh. Grand Copthorne Waterfront Hotel Singapore proudly presents this Japanese buffet at the hotel’s Food Capital restaurant.

Trained under Michelin-starred Chef Santaro Lee, Chef Elson combines refined Japanese techniques with a modern izakaya-style buffet, highlighting seasonal Japanese ingredients.

This marks the second instalment of Food Capital’s cultural-themed dining series, following the success of the Phuket Flavourscape Buffet, supported by H.E. Mrs. Ureerat Chareontoh, Ambassador of Thailand to Singapore. The launch event on 16 April will feature captivating traditional Taiko drum performances, along with a tuna cutting ceremony by Chef Elson Lee. Adding to the excitement, a lucky draw will offer enticing prizes worth up to $800, including a 3-day 2-night stay and a 2-day 1-night stay in the newly refurbished Grand Deluxe Room with breakfast for two. This special evening promises a vibrant celebration of Japanese culture, flavours, and hospitality.

With 27 years of experience in Japanese cuisine, Chef Elson Lee trained under the esteemed late Michelin-starred Chef Santaro Lee, Singapore’s first local Japanese resident omakase chef, who notably served Singapore’s former Prime Minister Lee Kuan Yew and his family. Under Chef Santaro’s mentorship at the now-defunct Santaro Japanese restaurant at Amara Hotel, Chef Elson honed his craft, mastering refined Japanese techniques while drawing inspiration from French and Italian gastronomy. His expertise results in an innovative take on classic izakaya dishes, seamlessly blending tradition with contemporary influences.

Guests can expect a meticulously curated menu, from expertly grilled robatayaki skewers to premium sashimi and inventive small plates, each crafted to balance umami-rich flavours with refined artistry. The Flavours of Japan Sashimi Platter presents the finest Hamachi, salmon, tuna, and octopus, while the Grilled Unagi, caramelised to perfection, and the bold, savoury Japanese Beef Curry offer deep, umami flavours.

From the robatayaki grill, savour the smoky Japanese Pork Skewers and Chicken Yakitori, or enjoy the delicate harmony of Beef Tataki Salad with ponzu dressing. For comforting warmth, the Oden Station features shrimp gyoza, assorted mushrooms, and pumpkin in dashi stock, while crispy indulgences like Nobashi Prawn Tempura and Okonomiyaki provide a satisfying crunch. Sushi lovers can also indulge in a specially curated selection from a two-meter-long sushi belt.

The Live Station elevates the dining experience with two Chef’s Choice selections of the day, complemented by a variety of signature roasts, including herb-crusted roasted beef, Australian beef striploin with red wine jus, grain-fed beef ribeye with port wine jus, Bavarian roasted whole chicken, and slow-roasted lamb leg with rosemary jus. To conclude the meal, guests can indulge in an exquisite selection of Japanese desserts, ranging from delicate Wagashi to Green Tea Pound Cake, Hojicha Crème Brûlée, and Black Sesame Ice Cream. Alongside these exciting offerings, Food Capital will also continue to serve an array of Seafood-On-Ice, Western, Asian, and International delights.

Adding to the immersive experience, diners can enjoy a curated selection of Japanese beverages that include Kirin beer, Roku Gin, Choya and Sake, specially chosen to complement the rich and layered flavours of Chef Elson’s creations. Whether indulging in an intimate dining session or a lively gathering, guests will be transported to a modern yet authentic Japanese setting. An additional top-up will be required for beverages, and guests can also choose from ongoing promotions.

Available from 16 April to 15 June 2025, this exclusive experience offers an indulgent lunch spread from Monday to Saturday, priced at $72++ per adult and $36++ per child (6-11 years old). For dinner, guests can enjoy the full buffet experience from Sundays to Thursdays at $102++ per adult and $51++ per child, while weekend dinners from Fridays to Saturdays are priced at $112++ per adult and $56++ per child. Children under five years old dine for free.
