Estate Hilton Singapore buffet news: the all-day buffet restaurant has redefined its buffet experiences with a culinary symphony of quality and flavours beyond new live kitchens and 10 new cooked-to-order chefs’ signatures. Available from 12 March onwards, the elevated buffet concept presents a curated selection of à la minute specialties from Estate’s esteemed chefs featuring premium ingredients like foie gras and tomahawk steak, specially prepared-to-order from live kitchens and served directly to the table, alongside the new refreshed buffet favourites.
Purposefully designed to satisfy all palates without compromising on quality, the Orchard road hotel promises a buffet experience for everyone including an array of familiar favourites, accompanied with inclusive options from a vegan salad bar to the new signature cooked-to-order dishes that can be tailored to each diner’s dietary preferences.

The new dinner-exclusive 10 chefs’ a la minute signatures boast a selection of premium offerings, encompassing Western and Asian culinary fare.
A star dish not to be missed, meat lovers can indulge in the mouth-watering Slow-Roasted Tomahawk, a prime cut paired with black truffle sauce, homemade Yorkshire pudding and mustard. Other highlights include the decadent Pan-Seared Foie Gras with apple and passion fruit compote and port wine glaze – an ode to Director of Culinary Vijayakant Shanmugam’s early culinary journey, as well as a twist on Estate’s iconic Signature Black Truffle Roasted Duck, elevated with charcoal rice and truffle hoisin sauce.
Lavish dishes await those who relish the ocean’s offerings. Starting with the tender Signature Octopus served alongside homemade potato gnocchi and a rich Bolognese sauce. Diners can also savour flavours of the sea including Baby Abalone with Homemade Black Bean Tofu, followed by Slipper Lobster with Sarawak White Pepper Sauce. Other signature seafood dishes include Balsamic Prawn with Macadamia Nut and Steamed White Fish, utilising the freshest catch of the day, paired with green chilli sauce and black bean.
For the adventurous palate seeking unique options, look no further than the deep-fried Frog Leg with Yunnan Mushroom Rice and the seemingly unassuming yet comforting Braised Pork Noodles. Each spoonful of the 13-spice broth entices with its flavourful essence, enhanced with pickles, green peppercorn, coriander and white noodles.

At the Oysters and Seafood Bar, diners can dive into an assortment of ocean-fresh premium seafood like Maine Lobster, King Snow Crab Legs and Freshly Shucked Seasonal Oysters, accompanied by various condiments.
The all-time favourite Japanese Kitchen has transformed with the debut of a Live Nigiri Sushi Bar. Indulge in freshly crafted nigiris, such as Salmon-Teriyaki glaze with furikake, complemented with a selection of sashimi options.
Estate’s newest addition to the salad bar – the one-of-a-kind Raclette Cheese Caesar Salad, skilfully prepared by a stationed chef will leave diners yearning for another serving. For those who prefer chilled salads, the Vegan Salad Bar promises to astound with its stellar array of inclusive options.
