Hilton Singapore Orchard introduces Ginger.Lily Bar, a bold new sub-concept under its botanical-inspired hotel lounge, Ginger.Lily. Launched on 3 September, the Singapore hotel bar marks the venue’s evolution into a dedicated cocktail destination, led by Assistant Bar Manager Michael (Mike) Mendoza and defined by multisensory experiences, inventive cocktails, refreshed music programme, and dynamic guest shifts. This new bar experience invites guests to drink differently, feel deeply, and rediscover the familiar through a sensorial lens.
Synaesthesia 2.0 cocktail collection at Ginger.Lily Bar
The signature collection, Synaesthesia 2.0, is a cocktail experience built around the five senses – sight, sound, scent, touch, and taste – with each creation inspired by a dish and paired with a complementary bite and sensory element. Guests may explore the collection through curated flights of five or ten cocktails, or à la carte.

“We’re not just mixing drinks; we are crafting experiences that speak to the senses. With this new cocktail collection, I want our guests to feel something, to explore how our senses come into play through different cues. By drawing on familiar flavours and unexpected elements, my intention is to curate drinks that not only taste good but resonate on a deeper level, evoking emotions and memories. Because to feel is to truly be alive.” says Mike.
Highlights from Synaesthesia 2.0 includes:
1. Sight
These cocktails are paired with coloured eyeglasses to modulate flavour intensity:
• The Pesto Diaries: A citrus blend inspired by pesto pasta, paired with a Snellen jelly made from white wine, best experienced through green eyeglass that highlights freshness, or yellow eyeglass to enhance sourness.
• The Devil Wears Melon: A unique take on chili lime watermelon salad with Cointreau, watermelon rind juice, cheese distillate, citrus served with molecular mojito caviar. Experiment the drinking experience with red eyeglass for pronounced sharpness, while pink enhances the sweetness.
2. Sound
Cocktails are served with neck speakers and curated soundscapes to alter flavour recognition, with higher pitches amplifying sweetness and lower pitches enhancing bitter notes:
• Toss Me Baby One More Time: A Bacardi rum cocktail with slow-pressed apple and arugula, echoing a fresh green salad, served with apple martini fluff.
• Set Fire to the Feta: A honey-infused dry gin blend inspired by bell peppers and feta cheese, finished with port wine chocolate.
3. Feel
These cocktails are designed to deepen flavours and feelings through spice, warmth, and form.
• Aroi Mak Mak: A tom yum-inspired cocktail with Strangers and Sons guava gin and lime, accompanied by a frozen rose-shaped beer agar.
• Running on Fumes: A play on coffee and donut—a unique mix of rum, donut syrup, yuzu and cinnamon, topped with latte cream, served cold.
4. Scent
Scent accounts for the majority of taste perception and takes the lead in these evocative creations:
• Eau de Curry: Butter chicken notes meet The Macallan 12 Double Cask Whisky, curry bitters, and gula melaka, served with mango lassi and yoghurt gel.
• Extrait de Brunch: A buttery, truffle-accented The Macallan 12 Double Cask Whisky blend with honey, lemon and earl grey foam—elegant and airy, like a fluffy pancake.
5. Taste
Cocktails explore umami through layered flavours and unexpected combinations:
• Taco ‘Bout Umami: A bold mix of Campari, corn mango, and mayo, paired with umeshu and a chilled sour plum.
• Funk Shui Mushter: A savoury mix of East Indies gin, shiitake tonic, topped with tofu cube.

Guest shifts and live beats at Ginger.Lily Bar
To celebrate the launch, Ginger.Lily Bar will host special guest shifts on 5 and 6 September featuring two of Taiwan’s most celebrated bars:
• Ariel Hou of Bar Pine (Tatler Taiwan’s Top 20 Bars 2025 & Stranger & Sons Gin Ambassador)
• Elmer Chen of East End Bar (first hotel bar to be recognised in Asia’s 50 Best Bars)
Ginger.Lily Bar will also present its own signature cocktails from Synaesthesia 2.0 to complete the sensorial theme in full circle. Amplifying the energy, a refreshed music program curated in collaboration with Wild Pearl Studio and acclaimed local artist Leland will feature genre-fluid live DJ sets every Friday and Saturday evenings from 5 September.
Curated cocktail gallery and takeaway bar
Beyond cocktails, guests now enter Ginger.Lily Bar through a dedicated entrance that flows through a curated cocktail gallery and takeaway bar counter. Each seating begins with a rotating amuse-bouche inspired by signature cocktails, such as bite-sized bell pepper stuffed with feta, an edible prelude to one of the signature cocktails; Set Fire to the Feta.
From mid-September, the team will launch ‘Shaken by You’, a social campaign inviting followers of @Ginger.LilySingapore to co-create the Cocktail of the Month. Followers will be encouraged to submit dish inspirations for a crowdsourced Cocktail of the Month, fostering the bar’s connection to the community and creativity.
