InterContinental Singapore’s new executive pastry chef

InterContinental Singapore has announced Desmond Lee as the luxury heritage hotel’s new Executive Pastry Chef, whose craft has been honed through an outstanding culinary career in the hospitality industry for the past 13 years. Desmond will oversee the daily operations of the pastry and bakery function, leading his team in the conceptualisation and creation of innovative pastries and desserts for the hotel, including new iconic wedding themed cakes and unique catering menus, as well as curating the famed thematic afternoon tea series at The Lobby Lounge.

Described as a self-motivated individual who is tireless in his quest to advance his craft, Desmond is constantly opening his mind to new pastry techniques and styles. Often praised for his creativity, dedicated attitude and fine craft, Desmond expressed enthusiasm in joining InterContinental Singapore.

Born in Malaysia and currently a Singapore Permanent Resident, Desmond brings with him a wealth of experience in pastry making and has worked in some of the leading luxury hotels in Singapore and Malaysia. Most recently, Desmond was Pastry Chef at Mandarin Oriental Singapore for eight years, where he was promoted three times and rose through the ranks from Junior Sous Chef to Pastry Chef.

Desmond has several local and international accolades under his belt and has participated in the World Pastry Cup 2015 and 2017 in France and Greece respectively. His honours over the years include overall champion at the Singapore Pastry Cup 2015, Asian Champion at the Asian Pastry Cup 2016, as well as champion at the Singapore World Chocolate Master 2017, where he was also awarded The Best Chocolate Showpiece and The Best Snack On-the-Go. Desmond is also the first pastry chef to represent Singapore in the finals of the World Chocolate Master 2018 in Paris and was recognised as one of the top 10 finalists.

Currently serving as an active member of the Singapore Pastry Alliance, Desmond is also involved in mentoring young aspiring pastry chefs.

Outside of work, Desmond enjoys working out in the gym and reading up cookbooks to stay inspired.
