Revamped InterContinental Singapore cocktails bar news: the luxury hotel’s The Lobby Lounge has announced its latest innovative dining and drinking offer! Its Head Mixologist Rhodora Amurao, unveils an array of newly crafted cocktails in addition to their signature cocktails, available from 1 October 2024. Set in the heart of a historic precinct, these draw inspiration from the stories of the surrounding neighbourhood.

Crafted in collaboration with consulting award-winning mixologist Jesse Vida, tipplers can delight in a meticulously crafted menu which is designed to engage the five senses, taste, smell, touch, sight and sound – the stories that each drink narrates. The refreshed menu is a continuation of its original concept comprising day and night cocktails that complements how The Lobby Lounge bar and dining venue evolves from dawn to dusk.

Commencing the journey at the enchanting Sultan Gate Gardens, this section gains inspiration from the iconic Gelam Trees, and spice garden of the former Malay Palace in Kampong Glam. Guest can indulge in the crowd-favourite Royal Rosales, an ideal companion for a sunlit afternoon made up of Kyro Gin, Nardini Bitter, Strawberry, Grapefruit, Lemon, Absinthe, Pink Pepper and Sea Salt. Or simply enjoy the citrusy Reverie, drawing inspiration from the lush serenity of Sultan Gate Garden, offering a moment of peaceful reflection in every sip with Nikka Coffee Grain Whisky, Fair Kumquat Liqueur, Hibiscus Bitter, Orange Bitters and topped with a lemon twist.

A historic building complex in Singapore, which began life as a Catholic convent, it is now a beautifully restored complex featuring Gothic-style architecture framed by elegant spires and arched windows. Inspired by the culinary and cultural richness of CHIJMES, The Lobby Lounge is proud to present Abbey Gardens Punch – a blend of Kaffir Lime, Veritas Rum, Calamansi, Pineapple, Ginger, Honey, Fino Sherry, Milk Wash, Orange Bitters and topped with a Dried Ginger Candy. Indulge in the creamy and spicy Gothic Arch – shaken with Chalong Bay Spice Rum, Ube Cream Liqueur, Banana Liqueur, Adriatico Amaretto, Lime Juice, Ginko Nuts and Coconut Flakes. The vibrant cocktail captures the essence of CHIJMES, and its ingredients mirror the rich and nuanced flavours of traditional yam desserts such as Orh Nee and Ube Halaya, reimagined with a modern twist.

As the story continues, journey to the National Library, a modern architectural marvel with a sleek glass façade. Head Mixologist Rhodora creatively combines the city’s beloved Kopi, also known as Nanyang coffee, with a refreshing take on the classic Pina Cola to create the twist. Kopi Colada, with Veritas Rum, Pineapple Juice, Lemon, Milk Wash, Coconut Cream, Nikka Coffey Vodka topped with a sweet Kopi Foam Gula Melaka and Dried Pineapple.

For a more spirit-forward drink, indulge in an earthy The Archives – a concoction of Compass Box Glassglow Blend, Merlet Apricot Liqueur, Oloroso Sherry, Lemon Juice, Honey, Dried Apricot and garnished with mint leaves. The Archives honours the vast archives which preserves the nation’s heritage and celebrates Singapore’s culture and history.

Venture on to the electrifying and vibrant Haji Lane with Narrow Lane – a unique blend of Tequila Ocho Plata, Silvermoon Tea, Koch Elemental Mezcal, Yuzu, Agave Nectar, Soda, Black Lemon Bitters, Cardamon Bitters adorned with Lemon Twist. For those who seek something deeper and more enigmatic in their evening drinks, Nocturne Alley is the perfect ode to the nocturnal charm of Haji Lane; a spicy cocktail prepared with Teeling Whisky, Longan, Mulassano Vermouth Rosso, PX Sherry, Angostura Bitters and Dried Longan.

This cocktail harmonises the smooth, caramel richness of Nikka Coffey Grain Whisky with the citrusy notes of Kumquat Liqueur and fragrant Hibiscus Bitters. A touch of Orange Bitters adds a delicate balance while a twist of lemon delivers a crisp, refreshing finish.
