A visionary in the world of haute pâtisserie, Nicolas Rouzaud has spent more than two decades refining the art of French pastry, seamlessly blending tradition with modern creativity. Born and raised in France, his passion for baking was sparked by working in the traditional bakeries of Toulouse, where he began honing his skills and embarked on a series of apprenticeships. Later, his journey to perfect his craft led him to Les Compagnons du Devoir, where he earned his CAP diplomas in Pastry, Chocolate, Confectionary, Ice Cream, and Bakery.

His career took him from intimate pâtisserie kitchens to larger-scale production in Brussels, with his time at Michel Kayser’s two Michelin-starred Alexander in southern France marking a pivotal moment. This was followed by seven years at Le Bristol Paris, where he rose to First Sous-Chef in Pastry, working alongside renowned Head Pastry Chef Laurent Jeannin and leading a brigade of 19 chefs. From The Lanesborough in London to The Connaught, where he launched The Connaught Patisserie, Nicolas has cemented his status as a leading figure in the world of fine pâtisserie.

Offering a first-of-its-kind experience in Doha, this afternoon tea steps away from the traditional British-style tea service, reflecting the elegance and traditions of French palaces. About Nicolas Rouzaud

One of the most fêted Master Pâtissiers in Europe, Nicolas Rouzaud is known for his exquisite fruit-focused pastries, each created with a profound respect for French culinary traditions, combined with a lightness of touch and a hint of nostalgia.

Growing up surrounded by lush orchards, Rouzaud’s love for fruit and patisserie started at a very young age. As an apprentice, he worked with some of the best bakers and pâtissiers throughout the country. Seven years at Le Bristol-Paris followed, under the great late Laurent Jeannin, where he developed his deep understanding of luxury gastronomy. In 2020, with more than twenty years’ experience, he opened The Connaught Pâtisserie, regarded as one of London’s most exceptional pâtisseries.

Eschewing gimmickry and excess, his signature tartelette is a simple, elegant ensemble of fruit at its seasonal, unadorned finest, encased in buttery pastry. Visually stunning, made with meticulous technique and only the most perfect ingredients, each mouthful is an intense explosion of wonder and joy.
