One-Ninety Bar cocktails news: Four Seasons Hotel Singapore is inviting guests to embark on a odyssey like no other with the latest ‘Secret Gardens menu at its hotel bar with garden. With nine new cocktails that tell the story of culture and timeless history, each libation is an invitation to sip and celebrate the joie de vivre of summer as one discovers a tapestry of flavours inspired by iconic botanical gardens in Singapore, India and Montreal.

Curated by Head Bartender Sophia Kang and Beverage Manager Gabriel Carlos, the new menu welcomes the addition of two cocktail collections that pay homage to the lush gardens in Ooty, India, as well as the stunningly rich cultural grounds of Montreal Botanical Garden in Canada.

“The refreshed menu embodies our continued quest of curating a stylish repertoire of drinks that is both innovative and contemporary. With a new series of cocktails that range from refreshing to spirituous, we’re excited to extend a creative spectacle for our guests to immerse themselves in some of the world’s most iconic botanical gardens, right here at Four Seasons Hotel Singapore,” says Sophia.

The Secret Gardens menu is a thoughtful collection of tipples that embody the essence of each city, transforming the stories into liquid poetry, where every shake, stir and pour reveals a chapter untold.

Singapore Botanic
Rose of Sharon
Brass Lion Dry Gin, Muyu Vetiver Gris, Cointreau, Hibiscus, Pineapple, Yuzu, Grenadine – Inspired by the engravings of Korea and Singapore’s national flowers seen on the “Conversation” plaque in the Singapore Botanic Gardens, this concoction marries the flavours from both cultures harmoniously, and is Head Bartender Sophia Kang’s tribute to the iconic Singapore Sling.

Zingiber
Vida Mezcal, Ancho Reyes Verde, Ginger, Turmeric, Lime, Fever-Tree Grapefruit Soda – A Paloma variation with a subtle smokiness of mezcal. Bright and refreshing, look forward to citrus notes with every sip, topped with a Peychaud’s bitters-soaked candied ginger for a piquant-flowery sharpness. A tribute to the iconic ingredient in Asian kitchens and the Ginger Garden in Singapore.

Kampung Kueh
Orientalist Imperial Solera 23 Rum, Bitter Truth Golden Falernum, Coconut, Pandan, Jackfruit, Cream, Egg White – An aromatic dessert cocktail that embodies the popular local treat, all in one glass. A toast to the kampung (village) spirit and food culture, significant in Singapore’s treasured heritage.

Kopi Gao
Jameson Irish Whiskey, Cold Brew, Amaro Montenegro, Coffee Cream – Likened to a classic local kopi (coffee), this spirit-forward creation is a modern tribute to Singapore’s coffee culture elevated with notes of vanilla, silky coffee infused cream and freshly cracked black pepper for added texture.

Ooty Botanic

Bacardi Reserva Ocho Rum, Italicus Rosolio di Bergamotto, Lime, Lotus Orgeat – A captivating homage to India’s national flower, this citrus rum-based cocktail is a creative twist on a classic Mai Tai and is a pretty sight to behold with its deep-ruby lotus root garnish.

Nilgiri Hills
Monkey Shoulder Whisky, Nilgiri Tea, Curry Leaves, Coconut, Fire Water, Whey – An ode to its namesake, Nilgiri Hills perfectly harmonises a symphony of flavours that the region is best known for. An umami milk punch style that marries whisky and coconut cream, punctuated with aromatic curry leaves and fire water to bring out the warm spices of summer.

Kokko Negroni
ARC Botanical Gin, Campari, Cocchi Vermouth di Torino, Nuet Moments Toddy, Cacao Nibs – A timeless classic reimagined with cacao nibs, Negroni connoisseurs are set to be charmed with this spirit forward creation that comes adorned with a homemade tuille leaf made from spirulina.

Orchard Market
Michter’s Small Batch Bourbon, Banana, Strawberry, Lemon, Plum Bitters, Foamee – An aromatic Whisky Sour with light refreshing notes, this drink showcases the sweetness of summer with strawberry banana cordial, finished with plum bitters and dehydrated banana garnish.

Montreal Botanic
Pomme’s Picnic
Avallen Calvados, Apple, Lemon, Lavender, Honey, Champagne – Modelled after a classic Quebec cider and a tribute to French Canadian influences, this effervescent potion is perfumed with lavender honey, green apple juice and a splash of champagne for a bubbly finish.

Battle of Orleans
Michter’s Single Barrel Rye, Pierre Ferrand 1840 Cognac, Frangelico, Mancino Vermouth Rosso Amaranto, Fernet Hunter – A classic New Orleans cocktail and a close relative to the Manhattan, only with more levels of decadence lent from Frangelico. The result is a more balanced Vieux Carré that retains all of its trademark elegance and richness.

Dream Lake
KM 12 Gin, Distilled Plum Soju, Blueberry, Rosemary, White Wine Reduction, Cointreau, Lemon, Foamee – Gin-based with a captivating purple hue, this libation celebrates the close friendship shared between Montreal and Shanghai. It conjures the enchanting garden scenes experienced at sunset, embodying a serene and mesmerising ambiance.

Kado
Nuet Dry Aquavit, Mancino Vermouth Secco, Maple Umeboshi, Yuzu, Lemon – Inspired after Japanese floral events held in the summer, this drink evokes the essence of a vibrant flower bouquet. Anticipate a botanical concoction featuring aquavit and apricot infused brandy, elevated with maple umeboshi and garnished elegantly with nanten midori.

Zero-Proof Cocktails
In addition to the boozy selections, the new menu also introduces an updated array of non-alcoholic drinks crafted for a refreshing experience where flavour takes centre stage. Guests can explore a world of well-balanced beverages, offering all the taste without the buzz.

“We have seen a trend with zero proof cocktails over recent years. More guests are embracing a more mindful lifestyle as they seek alcohol-free alternatives that are equally satisfying and sophisticated. It’s also been an exciting adventure for us as bartenders to be more creative with new ingredients and techniques to fashion mocktails that are both pleasing to the eye and palate,” Beverage Manager Gabriel Carlos shares.
