Origin Bar Infinity cocktails concept launch: Shangri-La Singapore’s awarded bar has launched its latest cocktail concept featuring 18 new innovative cocktail concoctions inspired by ideas re-imagined into far-fetched cocktail concepts from our bartenders’ perspectives. With ‘Infinity‘ a strong emphasis is placed on various cocktail techniques to achieve flavour precision, served in different styles of cocktails, each one a testament to the fusion of imagination and craftsmanship.

The innovation doesn’t stop there. A new bar bites menu from Origin Grill accompanies the new cocktail menu, introducing a unique “fingers or chopsticks only” concept. Guests are invited to indulge in finger bites without the hassle of cumbersome cutlery, enhancing the Origin Bar experience with a drink in one hand and a delicious bar bite in the other.

Crafted by Origin Bar’s team of talented bartenders under the leadership of Beverage and Bar Manager, Adam Bursik, Infinity showcases the collective ingenuity of a group of free-spirited individuals, each hailing from diverse ethnic backgrounds. This dynamic team of mixologists brings to the table their unique interpretations of cocktails, infused with cultural influences and innovative techniques which guests will discover through the new cocktail menu.

Sex on the beach? Where all the waste and trash sits? NO, thank you. Using all things sustainable such as Sachi made from tofu waste turned to soy wine in Singapore, and oxidised wine fortified with leftover oranges infused alcohol – all served on a coaster made from waste collected from the beaches around Singapore.

Ma To Ma To
Fords Gin Distilled Ketchup, Green Tomato Siete Misterios Mezcal, Furikake
Sweet, salty, acidic, savoury and umami all at once. The complexity of Ketchup is truly inspiring. Sip on distilled Ketchup and Worcestershire sauce, green tomato cordial with the smokiness of Mezcal, and a finishing touch of fragrant roasted sesame and seaweed.

Art But No Latte
Cereals, Blueberry, Blackberry, Pineau Des, Charentes, Woodford Reserve Bourbon
Imagine a place, where it has everything with coffee, yet nothing at all. It’s the rest of your morning ritual. Time for illusions – the era where things are not what they seem. Cereals sous-vide Bourbon with dark berries cordial and raisins, shaken to frothy perfection. We faked it, till we make it.

Inspired by magnets and their magnetic properties, we sourced for high iron content ingredients which were utilised in different ways. We sous-vide figs and prunes at 55°C for few hours to get intensified flavours, before adding Creme de Peach and sour Ume plum wine.

A word where we decide where to break it. Overanalysing every detail, a labyrinth of uncertainty emerges as the inevitable outcome. Caramelised apples turned into cordial with coconut water and blend of Whisky and pine Calvados.

“We are thrilled to unveil ‘INFINITY,’ a culmination of our team’s passion for innovation and dedication to redefining the boundaries of mixology,” said Adam. “With this new menu, we invite our guests to embark on a journey of discovery, where imagination knows no bounds, and every sip is a revelation.”

The new bar bites menu is curated by newly minted Chef de Cuisine Simon Bell from Origin Grill. Embracing a “fingers or chopsticks only” concept, guests are invited to indulge in a delightful array of small plates and shareable bites that ignite a sense of culinary exploration, engaging with their food in a fun and interactive way. Highlights on the menu include the Beef Hash, with a puree made from green tomatoes used in creating the Ma To Ma To cocktail, the Bap Xao Bites, the Super Jerky and a Fried Gelato for our dessert offering.

Unveiling a new era in cocktail culture, the Origin Bar team invites guests to be mesmerized, and transported to a realm where the possibilities are endless, and the flavours are infinite.
