This high tea set is a sublime culinary experience that beautifully intertwines the hotel’s storied heritage with an elevated afternoon tea ritual. With the refreshed signature Heritage Royale Afternoon Tea set, Chef Jason presents a sophisticated menu that pays homage to the hotel’s roots while offering a contemporary twist on classic flavours. Delight in Baked Miso Black Cod, highlighting the delicate flavour of Atlantic Cod, perfectly baked and paired with miso eggplant; Charcoal Barbeque Eel Quich blends the smoky, savoury taste of smoked Unagi with the soft, creamy texture of Tamago, all encased in a flaky quiche crust; Japanese Lobster Salad Sandwich combines the rich taste of lobster with the unique flavours of mentaiko, shredded Itokiri Togarashi, and Tobiko, all nestled within a toasted brioche.
