With over two decades of culinary experience under his belt, the Italian chef has launched a refreshed menu of Italian dishes embodying his cooking philosophy of genuine classic where tradition and innovation intertwine.
A testament to his belief in transcending the culinary boundaries while remaining deeply rooted in authenticity, Chef Roberto will transport your taste buds to the coastal shores of Italy with his rendition of risotto, the squid ink risotto Al Nero Di Seppia. Look forward to a casual, laid-back dining amidst picturesque pool views as you savour the creamy, velvety Italian classic of Acquerello aged carnaroli rice simmered to perfection and reinvented with burst of umami flavours of cuttlefish and bottarga. The culinary odyssey with Chef Roberto continues as his menu of freshly made pasta envelopes your senses with the aroma and comfort of home through his homemade pasta recipe.
Dubbed himself as a culinary artist, Chef Roberto depicts food as a form of art, a composition of flavours, textures and colours presented on plates.
“Each ingredient is like a musical note, each dish signifies a melody, and they blend harmoniously to create a symphony of flavours,” says Roberto Zorzoli.
Shining the spotlight on one of his signature dishes (part of the new Italian Dolce Vita menu), the Branzino Al Cartoccio boasts his creative spin as he composes a canvas of taste with handpicked selection of herbs such as thyme, rosemary and oregano, masterfully blended with the rich, butter texture of Chilean Sea Bass. A sweet finale to the gastronomic journey with Chef Roberto is none other than his unique take on the quintessential Italian dessert which draws inspiration from his grandmother’s Tiramisu recipe, a non-alcoholic variation fits for all ages including little ones, featuring aromatic notes of espresso perfectly balanced with the smooth, creamy texture of mascarpone mousse.
