Rooted in Italian culinary tradition yet shaped by the cosmopolitan character of Singapore, the new Luce presents a more generous, immersive table, where each return reveals something new to savour.

Guided by Chef de Cuisine Giuseppe Di Gaetano‘s philosophy of Luce in full flavour, the refreshed menu expands in both depth and expression. From premium seafood on ice featuring Japanese oysters, wild-caught Australian spanner crab, and seasonal shellfish, to an extensive selection of artisanal cheese from Italy and France as the 36-month aged cheddar, and premium cured meat as the 18-month Dry-Cured Prosciutto di Parma, the experience unfolds with a sense of abundance. Central to this evolution is the introduction of four live stations for dinner experience, elevated from two, bringing renewed dynamism to the dining room. Here, craft is performed in real time from the Frasers House Signature Laksa and grilled chicken and beef satay, to the signature Luce-misu assembled a la minute, creating moments of interaction, discovery, and theatre.

At the heart of Luce are Chef Giuseppe’s signature creations, each expressing a balance of tradition and contemporary interpretation. The House-made Squid Ink Tagliolini with fresh river prawn and kaffir crustacean bisque is prepared tableside on a gueridon, finished in the signature Parmesan wheel for a richly theatrical presentation. The pasta station offers a choice of trofie, cheese ravioli, or rigatoni, paired with sauces such as guanciale carbonara or slow-cooked beef Bolognese, inviting guests to tailor each plate to their preference. The Brandy and Mustard Marinated Angus Beef Striploin, served with open-flame bone marrow, green asparagus, vine tomato, and brandy rosemary sauce, anchors the experience with a deeply indulgent expression of Italian craft. The Sicilian-style Whole Branzino further reflects the refinement and restraint of coastal Italian cooking.

In keeping with Frasers House’s identity as a modern guild of makers, Luce also embraces the richness of its locale. Thoughtful cross-cultural expressions including the Chef’s Signature Pork Lup Cheong e Gorgonzola Dolce pizza and Penne al Cranchio Piccante con Funghi, durum wheat pasta with Chilli Crab Sauce and tiger prawns bring together Italian techniques with Singaporean flavours, creating dishes that feel both familiar and unexpected. Across the menu, from Western specialities to Asian and Indian selections, each offering is composed with intention, inviting exploration across cuisines and traditions.

The experience extends into a vibrant patisserie selection, where classic Italian desserts sit alongside contemporary creations and local interpretations. The signature misu takes on new life at its dedicated live station, complemented by inventive expressions such as Teh Tarik Panna Cotta and a rotating selection of handcrafted sweets, reinforcing the sense that there is always more to discover.
