Transformed Oasis pool bar and restaurant at Grand Hyatt Singapore offers enchanted garden

Oasis Singapore bar review: What an appropriate name, given in particular its outdoor bar in a lush garden, and one that takes the concept of an oasis in a buzzling city to new heights! Discover the details here via Happy Hour Asia! This Grand Hyatt Singapore-based unique dining and drinking venue has undergone a complete transformation, as part of the hotel’s makeover. The result? A component of the hotel as both hotel pool area and a waterhole with a distinct atmosphere! Designed as what can appropriately be described as a pleasure garden, the walk there, on level 1, from within the hotel’s Terrace Wing (an urban oasis and wellness haven) follows a snaking pathway through a lush mini rainforest.

Flanked by this lush garden and coming with guests’ privacy are also five exclusive Garden Suites. These are understandably in high demand and constitute a fascinating tropical experience with an urban resort feeling for the lucky ones that manage to book the suites.

Guests are also welcomed to the Oasis with a cascading waterfall, followed by an abundance of various – pretty much fully grown – trees, plants and flowers; all landscaped and manicured to perfection (and yet with dense vegetation)! It’s just an amazing accomplishment that draws guests further inside to where – poolside – the Oasis poolside bar and restaurant reveals itself, designed in architecture like no other! But one reference that definitely comes to mind is how this pool garden forms a nod to the nearby Botanical Gardens of Singapore.

Overall, perhaps its architecture is a modern interpretation of a vintage gazebo. Its wood pillar supported roof shields the outdoor marble bar and bar seats from the elements. It comes in the form of an open-air wooden structure, where bended brown pillars support a roof. While being a modern take it definitely comes with strong influence of Straits-colonial vintage design.

Rain or shine, under its roof guests can enjoy Oasis. The ceiling resembles oversized parasols, but all being made of wood. The lovely bar stools come with beige cushions and rattan weaving, placed on sandy tiles. Unsurprisingly, signature Peranakan tiles frame the square-shaped outdoor bar. There are also seating corners with sofas and armchairs in summer vacation style, plus bespoke low-slung marble tables.

In the pool area also find those classic colonial high-back rattan chairs, as well as oversized, robust parasols. In addition. there are some also cocoon-like gazebos with seatings – made with a weaving design.

Next to the bar the indoor-outdoor restaurant section also comes with white-and-beige vintage resort style dining chairs, and brown table tops, as well as also mint green chairs with white-grey veined marble tables. Cocoon-formed yellow ceiling lamps adds further character.

Champagne on ice!? Oysters!? If on holiday and in such unique and beautiful natural surrounds like this you might opt for oyster and bubbles already at lunchtime! On the menu, find Fine de Claire oyster, Pacific oyster, Baked Pacific oyster, and more.

For sparkling, Val d’Oca, ‘Rive di San Pietro di Barbozza’, and Valdobbiadene Prosecco Superiore D.O.C.G.m are offered as 180ml or by bottle

For champagne, opt for the displayed bottles on ice for the day, or get curious on other brands like, Pol Roger Brut Réserve or Ruinart Blanc De Blancs Brut!

Rosé wine on offer include: Château d’Esclans Whispering Angel Blend, Côtes de Provence, and Miraval, Blend, Côtes de Provence.

And appetizers to go with it include: Greek Salad, Steak Tartare, Prawn Cocktail etc.

If you are coming for a working lunch in this leisurely setting – and you should – the restaurant (open from 11:00am – 9:30pm) offers an all-day 2-course and 3-course set menu.

As a poolside outlet Oasis’ homely and hearty menu also serves Sandwiches & Burgers, including Portobello Burger, Ham & Cheese Panini, and Cheeseburger. For Asian food the irresistible Mee Goreng (yellow noodles, chicken, tiger prawns) is also on the menu here, along with Laksa Singapura, Lobster Noodle and more.

From the charcoal grill guests can order prime imported beef, Market fish fille, Italian pork sausage and more.

The rest of the wine list to go along with the food is comprehensive indeed for a venue of this size. For red and white, a menu with wine by the glass, and a new world and old world by bottle only. White wine by the glass starts with Greywacke, Sauvignon Blanc, Marlborough, New Zealand; while Delinquente Wine Co. ‘Roxanne the Razor’ Blend, Riverland is the most affordable red.

Oasis also offers an ‘Alcoholic beverage package’, priced at a very reasonable SGD 58++ per adult (for 2.5 hours, and promotions subject to change). A group of people can also enjoy packages such as the ‘Aperol Spritz Bundle’ and ‘Sundowner 888’

The Happy Hour Asia visit coincides with the golden hour and focuses on trying some of the cocktails as aperitivos/sundowners before heading for Italian dinner. What can seem to be a better choice than a craft cocktail called ‘Sun Kissed’ (with Doorly’s xo barbados rum, Campari, pineapple juice, passion fruit, lime juice, simple syrup). For this drink the balance is the main focus and the level of Campari flavour is just perfect!

The ’Jungle Bird’ (which originates from the Aviary Bar in the Hilton Kuala Lumpur in Malaysia and was created in the 1970s) has inspired the ‘Stirred Bird’ Oasis alternative edition (with pandan and pineapple-infused Doorly’s xo Barbados rum, Nardini bitter, mulassano rosso vermouth and pandan leaf).

To mention a few more craft cocktails ‘S.O.S’ stands out with its Mulassano vermouth bianco, merlet fraise des bois (an intense wild-strawberry liqueur), citrus, Singha soda water and mint;
And ‘Midnight Flower’ which, for starters, seems interesting for its Coffey gin from the Japanese whisky brand Nikka using eleven botanicals: Nikka Coffey gin, Merlet crème de cassis, Giffard lychee liqueur, El Bandarra rosé vermouth, and fever-tree premium Indian tonic water.

Other drinks to choose from includes various spritz (including ‘Oasis’ made of Saison rhubarb vermouth, homemade orange syrup and prosecco) as well as highballs.

Some cocktails are available in shot size too, and there are cocktails on tap – made inhouse in batches! Last order for drinks is at 9:30pm, so the Oasis is ready to serve throughout the day and well into the evening – in a city centre setting that raises the bar for tropical-urban outdoor drinking!
