WATERMARK Hong Kong dining news: the renowned waterfront dining destination located at Pier 7, Star Ferry, Central, welcomes guests to a new season with a whole line-of of dining offers: comforting weekend brunch, sumptuous tasting menus, delightful new a la carte dishes and a vibrant set lunch, all echoing joie de vivre. The new arrivals highlight the chefs’ dedication to serving inviting contemporary coastal cuisine in a refined yet relaxed setting with stunning 270-degree views of Victoria Harbour.

As the ideal venue for laid-back daytime dining with fantastic harbour views, Watermark launches Weekend Harbour Brunch Bliss offering an enticing array of appetisers and a decadent sweets platter, plus a signature main, and tempting bottomless beverage options to maximise merriment.

This relaxing weekend culinary experience begins with unlimited servings of delightful appetisers for sharing including the house-made Sourdough served with seaweed butter; Corn Fritter; and the wholesome salad and vegetable dishes of Pickled Beetroot Salad; Burrata Mousse served with fresh plum; Gem Lettuce Salad with furikake; and Broccolini with piperade sauce. Meat-lovers will rejoice in as many helpings of Wagyu Beef Tartare and Pork Belly as they can muster, along with Hamachi Crudo, Scallop Crudo and Semi-dried Squid for the ultimate indulgence.

Buoyed by a flexible pricing structure designed to suit all appetites, pockets and beverage preferences, the Watermark Weekend Harbour Brunch Bliss is available from 12 noon to 3 pm on Saturdays, Sundays and public holidays. The Standard Brunch is priced HK$598 per person, which includes a coffee or tea. Guests can choose to upgrade to a free flow of 150 minutes of non-alcoholic beverages for an additional HK$60 per person, including mocktail Tropical Punch, soft drinks, juices, fresh lime soda and any coffee or tea; or add HK$290 per person to enjoy 150 minutes of unlimited beverages which include handpicked wines and sparkling options like Fantinel Prosecco Extra Dry from Friuli, Italy, and California’s Hayes Ranch Chardonnay accompanied by brunch specials such as Aperol Spritz and our signature cocktail Suzie Mary, alongside Stella Artois Draught Beer, INEDIT Damm Rosé and selected non-alcoholic beverages.

Children aged 4 to 10 can indulge in the unlimited appetisers and desserts, along with a kid’s portion of main course, for HK$250 per person. Bubble lovers can also opt for some of the best Champagne offers in town including Louis Roederer Cristal Brut 2015/2016 available for an additional HK$2,499 per bottle, or Louis Roederer Brut NV for HK$598 per bottle.

As warmer air wafts into Victoria Harbour, diners are greeted by a refreshed a la carte menu, showcasing exquisite seafood offerings that celebrate the lightness of the season. Snow Crab Salad features sweet snow crab from the cold ocean depths, enhanced by kimizu dressing, honey pea, kohlrabi and crispy seaweed cracker. Another delight is Grilled Octopus, perfectly tender and served with potato, capsicum and a vibrant piperade sauce.

Vegetarian options include Wild Mushroom Soup, blending maitake mushroom, black termite mushroom and cordyceps flower into a creamy broth; and Roasted Cauliflower, served with the Latin American vibe of green mole, sweet and sour currant and hazelnut.

The new M7 Wagyu Bavette perfectly rounds out the lineup of succulent beef mains. This flavourful cut of Australian beef boasts the M7 wagyu designation, ensuring superb marbling and a rich fat texture. It is served with potato pavé, fava beans, morel, caramelised onion and natural beef jus.

In contrast, Patagonian Toothfish offers a delicate, buttery texture and a mild, sweet flavour. This fish melts in the mouth and is complemented by Japanese squash, barley, asparagus, pimento and prosciutto foam, creating a colourful, balanced dish that is perfect for the season.

A la carte favourites are refreshed with new ingredients that showcase the freshness of the season. Abalone and hamachi (yellowtail) join the standout house signature of Seafood Platter (HK$588 for half serving; HK$998 for whole) alongside lobster, oyster, prawn, scallop and squid. Chicken Skewer, starring Iwate-bred poultry, is now enlivened by pickled pugua (betel nut), shiso, peanut and chilli.

The tantalising combination of Fresh Plum & Burrata Mousse is served with pickled beetroot, pistachio and Pat Chun vinegar, while Hokkaido Scallop Mousse pairs scallop sashimi with green apple salsa, finger lime and dill oil. Another Japanese-inspired seafood starter is Hamachi Crudo, presented with kimizu sauce, shiso, kohlrabi, blood orange and yuzu miso.

A luscious new sweet of Banoffee, featuring fresh banana, banana compote, chocolate crumble and candied pecan, joins the curated selection of classic desserts.

New seasonal tasting menu offers sumptuous signature dishes

Diners seeking to savour the finest of the chefs’ refined coastal cuisine can choose the exquisite new Seasonal Tasting Menu – either a 7-course parade priced at HK$698 per person, or 5 courses for HK$528 – starring signatures from the a la carte menu. To enhance the dining experience, special house white, rosé or red wine is available for just HK$60 per glass.

Highlights of the tasting menus include Fresh Plum & Burrata Mousse; Hamachi Crudo; Three Yellow Chicken Roulade; Lobster Bisque and main course choices such as Patagonian Toothfish, M7 Wagyu Bavette, or sumptuous Grilled Whole Boston Lobster. A decadent Mango Coconut Pavlova concludes the meal on the sweetest of notes.

Alternatively, a 7-course Vegan Tasting Menu (HK$328 per person) presents the ultimate in healthy contemporary dining. Pickled Beetroot with pistachio, plum and Pat Chun vinegar; and Deep-fried Zucchini Flower with Pecorino and truffle honey awaken the taste buds alongside Sourdough with hummus and olive oil. Wild Mushroom Soup; Cauliflower with green mole, sweet & sour currant and hazelnut; and the delightfully complex main of Jerusalem Artichoke served with confit, shimeji, barley and pumpkin are followed by seasonal Fresh Fruit with Peach Sorbet.

The vibrancy of the season is reflected in the Watermark Set Lunch, priced at HK$238 per person for 2 courses and HK$298 for 3 courses, including coffee or tea, featuring a wide array of satisfying appetisers and mains, with plenty of choice to cater to all tastes.

Enticing first-course options include Semi-dried Squid with baby spinach and yuzu miso butter cream; and Brussels Sprouts with sakura shrimp and Parmesan. Other highlights are Oyster (2 pieces, add HK$28) with salmon caviar; creamy Burrata served with Iberico ham, beetroot, fig and pistachio (add HK$38); and a delicate Scallop Crudo (add HK$50) accompanied by black caviar, yuzu miso, avocado and witlof.

Main-course choices are equally delightful, with Seared Seabass complemented by crab meat, creamy polenta, asparagus, Kani miso and black caviar; and Abalone Barley Risotto enriched with pumpkin seed, seaweed and Sichuan pepper. For a lighter dish, Veggie Linguine is packed with seasonal vegetables. Diners may also indulge in Grilled Lobster Linguine (half, add HK$80); the signature Dry-aged CAB Beef Ribeye (10 oz, add HK$120); or succulent Duck Breast (add HK$38) served with potato fondant, fig and onion jam, ensuring a memorable dining experience.

The third course is Dessert starring the chef’s sweet temptation of the day. Guests may upgrade to their preferred specialty coffee or flavoured tea for an additional HK$15, or enjoy a glass of house wine for an additional HK$60.
