Having been greeted with a welcome mimosa (cocktail or mocktail) and presented with home-baked sourdough, guests can kick-start their weekend feast with an extensive selection of Appetizers, including an Antipasti Corner featuring assorted cold cuts, cheeses and condiments, plus a live station of hand-sliced 24-month aged Iberico ham. A Green Bar features crisp salads including a classic Caesar in a Parmigiano wheel, and diners can also savor spicy Thai salads and classic Scandinavian salmon gravlax.
Seafood lovers are treated to an amazing array of marine delicacies at the Fisherman’s Corner, such as freshly-shucked oysters, prawns, scallops, sand lobster, blue crab and clams with plenty of condiments, and a Live BBQ Station showcase premium seafood from the Gulf of Thailand, including fish wrapped in banana leaves, squid, prawns and sand lobster, alongside the prime international meats such as Australian steaks, New Zealand lamb chops, piri piri pork ribs, Italian sausages and marinated chicken, all enhanced with sides and sauces.
Throughout the day, chefs move around the Village Square and visiting guests’ tables to Pass Around hot smoked Scottish salmon and mini butcher’s burgers, and every diner is treated to one delectable À La Carte dish: luxurious Boston lobster benedict or silky-smooth French foie gras. The ultimate brunch dish, organic eggs benedict, is available throughout the morning, and a choice of authentic Italian and Thai dishes can be cooked to-order.
