Singapore wine pairing dinner news: From 7 October until 3 November 2024, the award-winning Hai Tien Lo at Pan Pacific Singapore, presents an opulent wine pairing experience where culinary artistry meets the world of fine wines. Hai Tien Lo’s Executive Chinese Chef Ricky Leung has crafted an impeccable menu to pair with celebrated wines from the legendary Maison Louis Jadot, the illustrious Burgundian winery established in 1859.

Delight in the curated selection of wines, masterfully paired with signature Cantonese creations, such as Baked Canadian Sea Perch Rolls served with Kumquat Chilli Sauce, paired with the 2020 Château des Jacques Moulin-à-Vent from Beaujolais in the south, with its watermelon and bubble gum notes perfectly accompanying the spicy kumquat sauce. The Smoked Stuffed Chicken Wing with Glutinous Rice is paired with the 2018 Louis Jadot Chambolle-Musigny Rouge, where the elegance of the Pinot does well to not overpower the chicken wing, yet has the structure to stand alongside the glutinous rice. The Duo of Lobster – Steamed with Egg White and Black Truffle, and Stir-fried with Garden Greens, paired with the 2021 Louis Jadot Chablis Blanchot Grand Cru, complements the richness of the lobster, but also allows acidity and minerality from limestone to cut through.

Other signature dishes include in the Singapore wine pairing dinner are the Sliced Barbecued Suckling Pig with Honey Glazed Ham, Caviar and Vegetarian Bean Curd Skin, Deep-fried Crispy Swan Puff with Crab Meat and Dried Scallops and the Hangzhou Dong Po Braised Iberico Pork Belly, served with Deep-fried Chinese Bun, each paired with a selected wine to complement and enhance its intricate flavours. To conclude the wine pairing experience, savour the Chilled Eight Treasures Snow Pear with Jasmine Tea Flower for an elegant and soothing finale.

Exclusively on 8 October 2024, partake in an extraordinary dinner hosted by Elie Peres, APAC Manager of Maison Louis Jadot, offering insights into the exquisite wines and guiding diners through each pairing, creating a truly memorable gastronomic experience at the restaurant.

Since inception 38 years ago, Hai Tien Lo has since enjoyed the reputation as one of the most respected Chinese restaurants in Singapore. Besides the new wine pairing menu, guests can also savour traditional Cantonese dishes and authentic dim sum, as well as a meticulously crafted beverage menu with exclusive Chinese teas and exotic Chinese liquors.

The ‘Louis Jadot Wine Pairing Dinner Experience’ menu is available daily, for dinner from 6:00pm – 10:30pm, at $228 per person (minimum of two diners required).
