Guests are welcomed with a love station inspired by Me’ebatan, the traditional Balinese custom of communal meal preparation. Chefs build the dishes using fresh native herbs and spice pastes, setting the tone for meal rooted deeply in island traditions.
The evening unfolds through a traditional family-style progression starting with appetizers of Sate Calon, featuring minced fish and coconut satay served with sambal matah, alongside Jukut Nangka, a clean broth of young jackfruit, black beans, and moringa leaves. For the main course, the sharing-style Gibungan for Two brings together braised pork belly laced with garlic and galangal, aromatic bamboo-cooked chicken, crispy anchovies, steamed vegetables with rich peanut sauce, and pandan-scented turmeric rice. The meal concludes with dessert, pairing Bubuh Sumsum, a silky rice pudding finished with palm sugar caramel, with house-made coconut ice cream.
