Blending elements from Western, Malay, and Chinese cuisines to harmonize with the discerning Malaysian palate, the tasting menu unfolds with a vibrant Niçoise Salad in a Jar, where the service team will shake and mix the jar before serving in front of the guests, adding a theatrical touch to the opening.

Continue the gourmet adventure with a medley of seafood starters, including a delicately assembled Prawn Cocktail, as well as the Salmon Mosaic in Thai-style garlic chili oil that ensures to tantalize your taste buds. Then, be prepared for the Trace Restaurant chef’s very own take on the classic baked half-shell seafood dish, Creamy Spinach Scallop Rockefeller. Served in an elegant bamboo basket, this classic dish is elevated with smoke puffing out as you lift the lid, creating a show-stopping moment to conclude first leg of the experience.

A palate-cleansing Orange Sorbet and silky smooth Cauliflower Velouté follow, setting the stage for the main courses to be presented. Dig into the fusion specialty of local Malaysian flavours in the Grilled Beef Tenderloin, or better known as “Daging Harimau Menangis” among the chefs, featuring medium-cooked, crispy-edged and tender cuts of meat, paired with a homemade chili and coriander Siamese dip.

Coming up next is the Smoked Chicken Roulade created by Executive Chinese chef, Linus Mak with a Szechuan twist, infusing tangy and refreshing tastes to this Oriental staple. Finally, allow a miniature bowl of Soba Noodles to deliver a satisfying conclusion to the savoury section.

Don’t forget to leave room for the grand finale that comes in the form of a decadent Almond Peach Tart, complemented by Strawberry Mousse, Berries Coulis and Cinnamon Gelato — portioned just right for you to wrap up the indulgent weekend afternoon on a sweet and memorable note.
