CÉ LA VI Singapore restaurant reopening: Marking its 15th anniversary this year the rooftop venue has proudly unveiled its bold transformation. The revitalised venue atop Marina Bay Sands crowns the skyline with integrated indoor and outdoor spaces, and a new menu embodying the spirit of Southeast Asia.

Since 2010, Cé La Vi Singapore has exemplified Singapore’s lifestyle and entertainment landscape, synonymous with celebration, indulgence and unmatched panoramic views. Global guests and residents alike have long embraced the elevated ambiance of its rooftop setting, where sunset skies melt into glittering skyscrapers. With this transformation, the homegrown Singapore brand deepens its promise to take guests on a sensorial exploration of Modern Asian cuisine, which is further amplified by Southeast Asian influenced design, and signature local hospitality.

Cé La Vi Singapore’s transformed spaces

Designed by award-winning boutique firm Prospect Design International, the Restaurant now
invites guests to flow through distinct zones: a show-stopping main dining space crowned by a
striking bar, an expanded Private Dining Room, and open-air Ocean View options. Together, the reimagined spaces now seat 151 guests.

The main dining room offers guests a theatrical interplay where style meets edge. A mirror stretched ceiling brightens the space, reflecting the rhythm of the city skyline by day and
enhancing state-of-the-art lighting by night; a feature that’s ingeniously integrated into wooden panel slivers. This immersive lighting casts a dynamic and luminous display that seamlessly energises the ambience as sunset becomes dusk. Burgundy-stained wood and rich textures
guide guests through the warmth of the space, accented by bamboo pillars that subtly honour
Southeast Asian craft. The onyx stone bar stands proud – a vibrant centrepiece where cocktails
and conversations converge; framed by a dramatic sculptural wooden column backdrop, and
softly lit panels showcasing a selection of premium spirits.

Venturing up the stairs, the expanded Private Dining Room now houses an alluring and airy
sanctuary that exudes its own personality and charm – perfect for hosting intimate celebrations,
exclusive gatherings, or private events.

The room first captivates with an expansive ceiling adorned in botanical wallpaper and accented with brass detailing, soft, plush seating wrapped around warm marble-accented tables add an inviting touch, while on the left, an elaborate built-in wine cellar glows, spotlighting a collection of top-shelf serves. On the right, design takes an eclectic turn: wooden panels are intricately carved with Southeast Asian motifs and playfully interrupted by bold, vibrant wallpaper cut-outs assembled like elegant, abstract mosaics. Outdoors, the Ocean View seats stretch gracefully along Marina Bay Sands balustrade, now reimagined with soft ambient lighting, textured flooring and uninterrupted sea views.

Cé La Vi Singapore: culinary and cocktail elevation

Rooted in the rich cultural diversity of Asia, blending fearless creativity with refined technique, Cé La Vi Singapore interprets traditional dishes through a modern lens, pairing bold Asian flavours with global influences. The redefined dining experience unfolds with a bold five-course degustation set menu. The à la carte menu spotlights dishes originating in Singapore with contributions from the chefs at outposts overseas. The new offerings celebrate the interplay of artistry and flavour, with each dish meticulously crafted to invite discovery and indulgence. Highlights of the menu include starters such as the buttery A4 Miyazaki Beef Tataki, served with turmeric leaf oil, balsamic pearls, and smoked soy aioli.

Guests can savour the Fluke Sashimi, featuring delicate yuzu soy, and tosazu, topped with crispy leek and aromatic ginger. In the Market section, guests choosing the vibrant Daikon Apple Salad will experience a blend of sweet and savoury notes with basil miso, orange segments, and sourdough crisps.

Inspired by a dish from the culinary masters at CÉ LA VI London, Miso Chilean Seabass is
paired with a punchy Szechuan green chili sauce that elevates the soft, flaky fish with a modern
kick. CÉ LA VI Dubai shares its lauded umami-rich Black Truffle “Sushi Rice” Okayu; a vegetarian option with butternut squash, shimeji mushrooms, and parmesan mousse. The tender Maple Leaf Duck Breast is glazed with plum and five-spice sauce, and served with purple endive.

To conclude, eight decadent desserts delight. Among them, the rich Chocolate Mousse is
refreshingly paired with coconut Earl Grey sorbet and hibiscus rose compote, while the Dulce Miso Toffee, a sticky date pudding enriched with gula melaka caramel, cardamom mousse and a red & white miso crisp lends an indulgent touch. Guests can also opt for the Cé La Vi Icecream, available across all Cé La Vi outposts, offering six inventive flavours – including Hong Kong milk tea, pulut hitam, sea salt gula melaka and kaya – that celebrate the region’s palate and its unique contemporary cultural identity.

The dramatic centrepiece bar within the Restaurant acts as the centrestage, where dynamic
bartending artistry is taken to the skies, offering guests a front-row seat to flavour and flair.
Attuned to the culinary narrative, Cé La Vi Singapore’s cocktail program channels Asian spirit,
imaginatively layered with global influences to conjure creative collisions. Among the standouts
is The Silent Gold; a bright citrus-forward twist on a classic margarita that nods to the tropics.
Tequila is enlivened with passion fruit, pineapple and lemon, while the fragrant shiso leaf adds
an aromatic garnish. For those who favour a bolder serve, Bar Manager, Eduardo Musteata lends his name to Ed’s Favourite Negroni offering a sophisticated reinterpretation of a White Negroni. Botanist Gin meets Suze bitter and Lillet Blanc, with subtle notes of white crème de menthe and saline, for a clean, herbal finish.

As twilight beckons, decadence can be found in Midnight in Jalisco. Anchored by rich Don Julio 1942 tequila, this spirit-forward cocktail is uplifted with Luxardo Maraschino cherry, delivering a complex yet elegant pour.

Cé La Vi’s global expansion

The launch of the transformed restaurant at the flagship Singapore location underscores the
brand’s commitment to innovation and excellence in the luxury lifestyle sector. Cé La Vi continues to expand its presence globally, with venues on the horizon in key cities worldwide, including Cé La Vi London at Paddington Square (17,000 sq ft) opening in September and Cé La Vi Miami (14,000 sq ft) at the end of the year.
