Phuket dining Le Méridien: The new Mai Khao beach resort invites diners to discover four of the island’s newest and most exciting dining venues, which blend culinary creativity with sustainability to create memorable moments.

Led by its highly skilled Executive Chef, Apisit (“Bomb”) Chaichana, who was born and raised in the Mai Khao area, the resort has developed a network of local, like-minded partners that share its passion for the environment, including Thai farms and fishing villages. This ensures unique dining experiences at Le Méridien Phuket Mai Khao Beach Resort that showcase the freshest ingredients while also empowering small-scale producers in Phuket.

Chef Bomb, who has competed in the prestigious Iron Chef Thailand competition, is passionate about elevating traditional Thai cuisine to create fine-dining experiences while preserving its authentic flavours. By using sustainable seafood, organic vegetables, fresh fruit and responsibly reared meats, he will aim to connect people through the universal language of food.

At Ocean Kitchen, guests can embrace the essence of the Mediterranean on the pure shores of the Andaman Sea. With a farm-to-fork concept, a focus on premium ingredients, a laid-back atmosphere and stunning vistas, this elegant restaurant provides a serene setting for light lunches and unforgettable evening dinners. From tempting bites and crisp salads to sharing platters, wood-fired pizzas and the signature “Surf & Turf,” accompanied with craft and draft beers, fine wines, cool cocktails and tropical juices, this is the perfect place to sit back and soak up the blissful beachside vibes. The Pool Bar is a stylish spot to kick back, relax and refuel throughout the day, including a cool gelato trolley. As day turns to night and the sun dips beneath the horizon, this is also the ultimate setting for cocktails and the best sunset views.

J’s Restaurant is the resort’s vibrant all-day dining destination – a bright and inviting venue for the daily breakfast buffet (including a dedicated “Phuket Corner”), light lunches and outstanding evening meals, including family feasts and couples’ dinners. From dawn till dusk, the talented culinary team serves up global flavours, Thai favourites and Phuket specialties. Guests should not miss Chef Bomb’s signature Phuket Lobster Noodles Sunrise, a unique version of the classic Mee Sua infused with Japanese yuzu juice, mirin and a green jalapeño sauce. With its dynamic open kitchens and live stations, J’s Restaurant also sets the stage for upbeat themed buffets.

Finally, The Nook is a cultured coffee shop where active travellers can grab light bites, freshly baked pastries, quick Thai comfort food and other casual international dishes throughout the day, as well as a great selection of signature Illy coffees and artisan teas. This versatile cafe can also be a casual, sound-proofed working space or a fun spot to play board games. Then, after dark, The Nook transforms into a social bar.

“At Le Méridien Phuket Mai Khao Beach Resort, we are fully committed to showcasing the authentic wonders of our idyllic island, including its fresh local produce and traditional dishes. Chef Bomb was born and raised in Mai Khao, so there is no-one better qualified to treat our diners to the best of Phuket cuisine. Many of life’s most memorable moments involve food, so we look forward to delivering truly exceptional dining experiences,” said the resort’s GM, Ms. Jirarat Ninpadub.
