The Wagyu Beef Burger offers an indulgent expression, featuring a 200g Australian Wagyu patty with aged cheddar, crispy bacon, and caramelised onions, brought together in a toasted brioche bun. For a hearty main course, the Mount Schanck Lamb Rack is presented with seasonal vegetables and natural jus, while the Traditional Wagyu Beef Bourguignon showcases a six-hour braised Wagyu beef cheek in a rich red wine reduction, paired with velvety potato mousseline. The Tom Yum Creamy Seafood Linguine showcases a contemporary twist where jumbo lump crab, Hokkaido scallops, and tiger prawns are enveloped in aromatic tom yum spices, lifted with lime and finished with a delicate saffron espuma.

The Seafood Fried Hokkien Mee brings together tender pork belly, tiger prawns, and baby squid, wok-tossed with yellow noodles and rice vermicelli in a richly savoury medley. While Our Singapore Laksa – a fragrant composition of tiger prawns, shredded chicken, quail eggs, and fish cake, enveloped in a velvety coconut broth that captures the soul of this beloved local classic.

For a more elevated palate, the Premium House Signature reinterpret local favourites through a lens of quiet luxury The new addition, the Angus Beef Short Rib Rendang is slow-braised to tender perfection in a rich, spiced Nyonya coconut stew, served alongside chap chye and jasmine rice, a comforting yet refined tribute to heritage flavours. The Boston Lobster and Abalone Laksa offers a lavish expression of a beloved favourite, featuring de-shelled Boston lobster and braised abalone in a fragrant coconut broth, enriched with 24-carat gold flakes. The popular Frasers House Beef and Black Truffle Hor Fun makes a return to the menu which showcases ICON XB Premium Wagyu striploin.
