New Dolce Vita restaurant menu news: Mandarin Oriental, Singapore has introduced a refreshed menu showcasing Restaurant Chef Roberto Zorzoli‘s innovative twist on Italian classics. From antipasti, risotto, and pasta to main courses as well as a new addition of pinsa selections, Chef Roberto invites you to savour the essence of Italy with every curated dish, elevated with a harmony of flavours and textures.
Begin the culinary odyssey to Italy with a curation of antipasti that is set to delight every taste bud. The Insalata del Sud offers a refreshing take with its vibrant medley of romaine lettuce, kale and carrot, and further enhanced with the creamy notes of goat cheese and the fruity sweetness of grapes. The fusion of spicy, tangy notes from nduja mayonnaise and the earthy flavour of artichokes add a flavourful burst with the tender and slightly charred texture of the grilled Mediterranean octopus in Polipo Scottato.

Be transported to coastal Italy with Chef Roberto’s rendition of Spaghettini Vongole e Gamberi with homemade spaghettini tossed with sweet prawns, clams, garlic and white wine sauce, and a light, citrusy lemon finish. Delight in the comforting richness in Risotto Cacio e Pepe, a risotto creation inspired from the traditional Roman pasta recipe with cheese and black pepper. The zesty gremolada infused with a blend of lemon zest, garlic, and herbs, marries perfectly with the subtle floral hint of saffron in Risotto Allo Zafferano e Guanciale – an appealing take on the classic, topped with braised beef cheek.
Meticulously prepared for sharing amongst two to four persons, savour the succulent, tender notes of salt-baked seabream in Orata al Sale, accompanied by a decadent, creamy oregano blanc sauce and the delicate hint of aromatic pink peppercorn.
Baked to perfection, enjoy choice of four newly introduced pinsa creations – crisp Italian flatbreads ranging from the classic Margherita with tomato and mozzarella fior di latte, to the mildly spicy Piccante with salami, the savoury Parma with parma ham, and the luxurious Tartufo packed with black truffle and truffle cream.
For those with a penchant for desserts, look forward to the signature classic Tiramisu or relish chef’s specially crafted Millefoglie Porcini, a dark chocolate chiboust layered with porcini mushroom pastry and drizzled with porcini ganache.
