Longtime Bali opening news: The vibrant dining scene in Bali has welcomed an exciting addition with this a modern Asian restaurant and bar located in the heart of Berawa.

Longtime is the latest culinary venture from Aussie hospitality innovators Jordie Strybos and Pablo Fourcard, who are responsible for everyone’s favourite Bali cafe Milk and Madu, alongside industry veteran Randa Assi, whose career spans continents from Melbourne’s Lucas Group to international openings for Gordon Ramsay.

At the helm of Longtime’s culinary journey is Chef Tyler Preston, from South-East Canteen pop-ups to iconic venues such as Chin Chin Melbourne and Bang Bang Byron Bay, Tyler is set to curate an enticing menu that celebrates the diverse flavours and culinary traditions of Asia.

One standout menu item, according to Tyler, is the Curious Burrata – a whole ball of locally made burrata served in Longtime’s signature chili crunch, paired with house-made roti.

“Traditionally, burrata is used in European cuisine, but I wanted to bring it into our menu with an Asian twist. One of my favourite things to eat is a spicy pepperoni pizza topped with burrata – this is my Longtime version: spicy, cheesy, with the crunch of roti,” Tyler explained.

Co-founder Pablo Fourcard has drawn inspiration from the allure of 50s-60s espionage chic and sophisticated modernism, this unique venue seamlessly blends retro-vintage glam with contemporary charm, creating an atmosphere unlike any other.

“We have purposefully designed the space so our guests can have a variety of experiences, all under the one space. We have seating capacity of 150, featuring an outdoor terrace, an eight-meter flush cocktail bar in the center of the main dining room, and an intimate semi- private dining room accommodating up to 40 guests.

“Every element of Longtime has been hand chosen and designd by local artists and craftsman. We really want to deliver an energetic and dynamic atmosphere, where Asian-inspired delights and expertly crafted cocktails blend in with the rhythms of hand-picked local resident DJs,” said Pablo.

The cocktail menu has been masterfully crafted by Jacob Sweetapple, award-winning bartender and managing partner at Notion Concepts, a consultancy service where he aims to elevate the drinking culture around the world through innovative beverage ideation and education.

“Our drinks are an extension of the culinary experience, incorporating traditional Asian flavours with contemporary techniques,” Jacob explained. “We’ve crafted a menu of 15 unique cocktails, each highlighting different ingredients and methods. A standout is the Mean Aunty, a bold mix of rum, pandan, lemon, and pineapple, fat-washed with Greek yogurt to create a rich, creamy texture that balances the refreshing tropical flavours.

The architecture and interiors of are envisioned by the esteemed Melbourne design firm Brandworks, known for their innovative and immersive concepts. According to Head of Interiors at Minded by Brandworks Sophie Metcalfe, Designing this restaurant and was an exercise in balancing mid-century sophistication with hedonistic playfulness.

“We wanted to create a space that felt like a timeless vacation home, where every corner invites guests to linger and lose track of time, as you might at a dinner party with friends.” Sophie said.

All lighting is by Bali-based Studio Nimmersatt, local furniture producer Mahalati furnished the space with custom finishes and sound design by Sontastic all to ensure an immersive dining experience, complementing the vibrant atmosphere. The construction of Longtime was entrusted to the experienced hands of Bruder, ensuring meticulous attention to detail and timely execution.
